So, everyone knows we had our fair share of ice cream and soju while in Korea, but what else did we eat? Because of our budget, and me being a vegetarian, we mostly resorted to cooking in Korea. We were house-sitting so we had a kitchen available to us. We had a fridge, a microwave oven, and a hot plate to use. While the foods we probably consumed the most were fries and ice cream, you will find that most of these dishes are quite healthy! We did have some ordinary foods like peanut butter sandwiches but I will primarily include some of the more interesting dishes.
First, some of the new recipes we tried in Korea. I should note that Kyle is the chief chef in our partnership. He pretty much comes up with most of the meal ideas and implements them. My assistance comes in the form of heating water, chopping some vegetables, etc. You can see many of the new Korean dishes we tried in Korean Food Part 1 (and 2) so I won’t show those here.
Homemade Pasta
with beans, zucchini, onions, other vegetables, and a sauce. While we tried out making homemade gnocchi while living in California, this was the first time we made another form of homemade pasta.
Vegetable soups.
We have made a number of soups before, but not something quite like these two. The second one is a pumpkin soup.
Vegetable Pancakes.
We actually used a Korean recipe for this dish.
Pita Bread
(or some version of it). We had tried this in the past but were happy with the recipe we perfected (Kyle perfected) here.
We made some food which we had made some version of in the past as well. You will see several dishes with tofu here (and above) which is something that is relatively new for us. I first tried tofu and college at a party and thought it was disgusting. We gave it another try in California and thought it was great. We have since tried multiple types and preparations of tofu.

This was a great use of a loaf of bread we got from the local bakery that had gone a little dry because we didn’t use it immediately.

We soaked the chickpeas, mashed them, combined with with a few other ingredients, and viola! We have done this a few times over the years. It went well with the pitas

We made quite a few of these. We made some sugar cookies and oatmeal cookies as well.
Fruit.
Not cooking, but worth mentioning! Pomegranate, mandarin oranges, kiwis, and bananas were all reasonably priced.
